Coconut Cauliflower Tacos
Serves 2 to 4
Preheat the oven to 400°F.Slice the cauliflower into bite-size pieces.In a medium bowl, combine the coconut milk, lime zest and juice, and 1/4 teaspoon of the salt. In another medium bowl, mix the breadcrumbs, cornmeal, shredded coconut, garlic powder, onion powder, chili powder, and the remaining 1/2 teaspoon of salt.Line a baking sheet with parchment paper. Set the bowls next to each other and dip the cauliflower pieces into the wet batter, then dry-mix to coat and place onto the lined baking sheet. Repeat this step until all the cauliflower is battered.Bake for 20 minutes, flipping the cauliflower after 10 minutes.Serve and enjoy with the Sweet and Spicy Mayo and your favorite tortillas and toppings.
