Vegan Crepes
In a medium bowl, whisk together all ingredients. Cover bowl and refrigerate at least 1 hour. Remove from refrigerator and stir.Lightly grease a large nonstick skillet and heat over medium-high heat.Place about ¼ cup batter in skillet and swirl to coat the bottom of the skillet. Cook 1 minute until set, then carefully flip, using a spatula or even your hands. Heat 1 more minute, then transfer to a plate.Repeat with remaining batter. Serve immediately.
