You’ll never find yourself in a jam again when running out of toast condiments! When fresh berries hit that sweet spot where they’re delicious but starting to get soft spots, this super-quick jam is the perfect way to use them up.
Remove any stems that are still attached to the berries. Mash the berries in a large bowl.
Combine all the ingredients in a saucepan. Stir over low heat until the sugar has dissolved, then increase the heat to bring the mixture to the boil. While still stirring, maintain the boil until the mixture reaches 105°C (221°F) on a kitchen thermometer.
Refrigerate in an airtight jar and use within 1 week.
