Sample Recipe: Sweet Potato Nachos
Nut-Free // Gluten-Free // Soy-Free // Prep Time: 5 Minutes // Cook Time: 40 Minutes // Serves 4
Who doesn’t love nachos? You’ll really love these because they’re a lot healthier than traditional deep-fried corn chips. Made with slow-digesting sweet potatoes, these are a perfect pre-workout snack and make for an amazing party snack. Take it to the next level and serve them with some Cauliflower Queso Dip (p. 124).
INSTRUCTIONS:
1. Preheat the oven to 400°F. Line a baking sheet with parchment paper or a silicone liner. Spread out the potatoes on the baking sheet so that they are mostly in a single layer.
2. Bake for 20 minutes and then flip the potatoes and bake for 15 minutes more. Remove the baking sheet from the oven and sprinkle the beans over the potatoes. Turn the oven to broil and cook the potatoes and beans for 5 minutes.
3. Remove from the oven and sprinkle with cilantro, scallions, salsa, and avocado. Squeeze some fresh lime on the nachos and sprinkle with salt
